PapaDlish Signature Roasted Garlic Sloppy Joes

Main Dish3–4 SandwichesAbout 40 Minutes

Deeply browned, crispy-edged beef meets roasted garlic and a rich, tangy sauce. Make a generous batch of sauce and add just enough for your preferred consistency. Finish with toasted brioche and, if you like, a cool, crunchy apple-cider slaw.

3–4brioche buns, toasted

Sloppy Joe Sauce — 1.5× Batch

Prepare the full amount, but start by adding only about two-thirds. Add the remainder gradually to reach your preferred consistency.

57 gtomato paste
90 gketchup
22.5 gWorcestershire sauce
11.25 gyellow mustard
15 gapple cider vinegar
7.5 gbrown sugar
10.5 gBetter Than Bouillon beef base
112.5 gwarm water

Directions

  1. Whisk together all sauce ingredients until the beef base is dissolved. This makes 1½ times the original sauce amount. Set aside; you may not need it all.
  2. Heat a large skillet until very hot. Brown the ground beef in two batches, allowing it to develop a deep crust before breaking into small crumbles. Transfer to a bowl and reserve about 100 g of the crispiest beef separately.
  3. Reduce heat to medium. In the same skillet, cook onion and green pepper for about 4–5 minutes until softened. Add roasted garlic and stir briefly until fragrant. Add smoked paprika, chili powder, and black pepper.
  4. Return the browned beef to the skillet, keeping the reserved crispy 100 g aside. Add approximately two-thirds of the prepared sauce. Simmer 12–18 minutes, stirring occasionally, until thick and glossy. Add more sauce gradually if desired; it should coat the beef without pooling.
  5. Taste before adding salt. Fold in the reserved crispy beef immediately before serving. Spoon onto toasted brioche buns and optionally top with Light Creamy Apple-Cider Slaw.

Papa D’s Test Kitchen Notes

  • Brown in two batches: Crowding the pan steams the beef instead of building a flavorful crust.
  • Reserve the crispy beef: Set aside roughly 100 g and fold it in at the very end for texture.
  • Control the sauce: The recipe makes 1½ times the tested sauce amount, but you decide how much to use. Stop when the beef is glossy and well coated, not soupy.
  • Salt last: Worcestershire and beef base already contribute salt.
  • For larger batches: Multiply all ingredients by the number of pounds of beef; prepare the full scaled sauce but add it gradually.
