Banana Bread Battle: Classic vs. Sourdough — Which Loaf Wins?

Sourdough won the texture battle. Classic won the final vote. I baked two banana breads in the same kitchen: one classic, and one made with sourdough discard. Then I put them head-to-head in a blind taste test to see which loaf people actually preferred.

The sourdough loaf came out ahead for moisture, tenderness, and crumb texture. Flavor was dead even, six to six, with two voters calling them the same. But when I asked which loaf they would actually choose, classic won with 8 votes, sourdough received 5, and 1 person picked both. So how did classic win overall when sourdough scored better in three categories? Let’s break down the results. In the charts, red represents sourdough and black represents classic.

How We Set Up the Taste Test

Each participant received individually packaged banana bread samples identified by red and black dots, along with a PapaDlish voting card to compare moisture, tenderness, crumb texture, overall flavor, and final preference.

What Papa D Learned

Both banana breads turned out delicious, tender, and moist. Coming out of the oven, the two loaves looked the same, and even the crumb looked identical when sliced. I really enjoyed both versions, but once I tasted them, I noticed a difference in their texture.

The sourdough banana bread had a slightly more crumbly texture in the mouth, while the classic version had a little more bounce-back in its mouthfeel as I ate it.

Neither was a bad result. They were just two different textures from two really good banana breads.

What made this taste test interesting was that the sourdough scored higher for moisture, tenderness, and crumb texture, yet the classic still came out ahead in the final vote.

That’s why I enjoy testing recipes. Sometimes the results surprise you!
